Clover Club Recipe

Immerse yourself in the elegance and vibrancy of the Clover Club, reimagined with a twist that incorporates the unique flavour of Davidson Plum Gin from Wolf Lane Distillery. This classic Clover Club cocktail, known for its silky texture and delightful balance of sweet and sour, is enhanced by the tartness of Davidson plum, offering a sophisticated and refreshing experience. 


  • 60ml of Davidson Plum Gin
  • 25ml of lemon juice
  • 15ml sugar syrup
  • 10ml aquafaba (chickpea water)
  • 3–4 raspberries


  • Shaker
  • Hawthorne strainer
  • Fine mesh strainer
  • Muddler


  1. Begin by muddling 3-4 fresh raspberries in the shaker to release their juice and flavour.
  2. Add 60ml of Davidson Plum Gin, 25ml of lemon juice, 15ml of sugar syrup and 10ml of aquafaba.
  3. Fill the shaker with ice and shake vigorously until well-chilled and the aquafaba has emulsified, creating a smooth, creamy froth.
  4. Double strain the mixture using both a Hawthorne strainer and a fine mesh strainer into a chilled cocktail glass.
