  • 60ml of Davidson Plum Gin
  • 30ml of Lemon juice
  • 15ml of sugar syrup
  • 15ml of aquafaba (chickpea water)

  2. In a shaker, combine 60ml of Davidson Plum Gin, 30ml of lemon juice, 15ml of sugar syrup and 15ml of aquafaba.
  3. Add ice to the shaker, filling it sufficiently to chill the ingredients as you shake.
  4. Shake vigorously for about 15–20 seconds, allowing the aquafaba to emulsify and create a smooth, frothy texture.
  5. Strain the mixture into the chilled glass, ensuring a smooth pour that showcases the cocktail's rich, velvety foam.
  6. Garnish with a twist of lemon peel, adding a fragrant, citrusy aroma that complements the drink's tartness.
